METHOD

  • prepare the meat

    Place the meat, at room temperature, on a plate and season it with salt and pepper.

  • Sear the meat

    Add oil to a pan and place it over medium heat. Add the pork chops and sear them until golden brown, about 3–4 minutes on each side. Transfer the chops to a plate.

  • Sauce

    In the same pan, add the capers and thinly sliced garlic, stirring to combine them with the pan juices. Pour in the white wine, increase the heat, and let it simmer until the wine reduces, about 3 minutes. Add the mustard and chicken broth, then cook for another 5 minutes.

  • Cook and serve

    Reduce the heat to low. Add the butter and cook until it melts, then stir in the parsley and return the pork chops along with their juices to the pan. Cook for another 1–2 minutes, then serve with your chosen side dish.
